Cheesemaking wasn’t a lifelong ambition for Charlie Henn. Raised on a dairy farm, he went off to college with the intention of becoming a veterinarian. Henn, however, found a passion for cheese while working in his university’s dairy pilot plant. There, he gained early experience in cheddar, producing shredded cheese for the cafeteria. Henn spent about 10 years of his career making ricotta and mascarpone cheeses. He returned to cheddar after starting at Agropur and began work toward his Master’s certification.
Henn strives to produce cheeses of the highest quality, and eagerly shares his knowledge with lesser experienced cheesemakers.
“The more that your cheesemakers know, the better your cheese is going to be,” Henn said. “I want everyone to know what we do and why we do it. I want everyone working together and I want to continue winning awards for our cheese.”
