Permeate: A cost-effective and versatile ingredient

Permeate is a lactose-rich product that is produced after the removal of proteins and other solids from fresh whey or milk. Obtained through filtration, it’s a versatile ingredient that can benefit food and fermentation applications.

Applications of permeate

The functionality of permeate is dictated by its high lactose content and can be used to partially replace other dairy ingredients such as sweet whey or skim milk powder. It contributes to functionality in food and beverages, provides nutritional benefits and adds a balanced, neutral flavor. Permeate can also be used as a carbohydrate starter for the preparation of fermented foods.

Permeate can be used as a cost-effective ingredient for added browning and flavor in baked goods. The salty characteristics of permeate make it ideal for replacing or reducing salt in formulations such as soups. It enhances flavor when used as a source of dairy solids in snacks, confectionery and dry mixtures.

Crino deproteinized whey

It can provide flavor enhancement across a broad spectrum of food and nutrition products. This affordable dairy ingredient enables significant cost savings in a variety of formulations.

Crino premium deproteinized whey

It is a highly functional whey permeate with a greater protein content. It provides a moist and chewy texture in baked goods. It also improves performance in both ready-to-drink and ready-to-mix beverages.

Crino permeate

Carries a high lactose content and it is reduced in minerals.  It may be used as a bulking agent in food applications without creating an excessively salty taste.
