What is permeate? Know the ingredient that can reduce sodium use

Salt is frequently used as an ingredient because it balances and enhances flavors easily and inexpensively. However, excess salt intake has become a global public health concern. Today, the food and beverage industries can count on an effective ingredient that can help reduce the amount of sodium in processed products. It is called permeate and it’s obtained from the filtration of whey.

Why does everyone want to reduce the amount of salt?

When the human body takes in too much salt, it can result in high blood pressure, kidney failure and osteoporosis. Based on dietary recommendations, a majority of people would need to reduce their salt consumption. It’s recommended that an individual consume less than 2,300 milligrams of salt per day. In the United States, about 90% of the population ingests 3,400 milligrams daily.

A special characteristic of permeate is its ability to supplant more expensive salt alternatives, while maintaining a product’s original flavor and nutrition. It’s an attractive option for processed manufacturers seeking to reduce the amount of sodium in their formulations. Permeate has a high lactose and mineral content, good solubility and a delicate dairy flavor. To maintain flavor, about 10 to 11 grams of permeate can replace about 1 gram of salt in products including soups, sauces, confectionery, dry mixes and beverages.
